The ELISA-TEK™ Cooked Meat Speciation Kit qualitatively detects animal species content in cooked and canned meat, meat products, and processed foods. The testing method, developed and utilized by the USDA, is based on antibodies targeting heat-resistant species specific, muscle-related glycoproteins.
Preventing adulteration of animal products with less desirable or objectionable species is important for economic, regulatory, health, and cultural reasons. The identification of meat species is performed in many countries to assure consumers that the meat and poultry they purchase is safe, unadulterated, properly labeled, and satisfies the requirements of various communities where the consumption of particular meat is proscribed.
