Lecithin from Soy, Refined, is a natural mixture of phospholipids consisting of phosphatidyl choline, phosphatidyl ethanolamine, and phosphatidyl inositol. In soybean lecithin the predominant fatty acid is polyunsaturated linoleic acid, amounting to about 70% of the fatty acids present.
