Adding solvent and then salts to a comminuted fruit or vegetable sample (10 g or 15 g) enables you to extract the pesticides of interest into the organic layer. However, adding a food sample with a high percentage of water directly to the salts may create an exothermic reaction that can affect your analyte recoveries.
