Typically prepared as a suspension in water adjusted to pH 5,0 with acetic acid. A 1% w/v solution will appear turbid.
Mucin is a high molecular weight glycoprotein that is the major constituent of saliva, gastrointestinal juices, mucos and other secretions. Mucin exists as an aggregated complex in excess of 106 molecular weight. It is a rich source of O-linked oligosaccharide chains.
Albuminoid substance in mucus which gives it its ropy consistency.
