Pectin, powder

Soluble in water (1 g/20 ml - viscous solution acid to litmus); insoluble in organic solvents.

Pectin is a heterosaccharide, component of terrestrial plant cell walls.

It is used as a substrate to identify, differentiate and characterised pectinase(s). It is also used to study its degradation by pectinolytic bacteria.
