De flydende elektroforesegeler bliver til en semisolid matrix efter afkøling og er lette at placere i løbekamre. Den gennemsigtige struktur gør det muligt at se farvede prøver, og som antikonvektions- eller sigtemedium bliver gelen porøs, så der dannes bånd, når der påføres elektrisk strøm. Ud fra den tid, det tager for båndene at dannes, kan fragmentstørrelse og ladning bestemmes. Elektroforesegeler bruges almindeligt til at separere DNA-, RNA- eller proteinblandinger og er centrale i analytiske forskningsmetoder.
