La campylobactériose est une infection causée par des bactéries Campylobacter, plus couramment appelées C. jejuni. Elle provoque des diarrhées inflammatoires, parfois sanguinolentes, ou des dysenteries ainsi que des crampes, de la fièvre et des douleurs abdominales. Le syndrome de Guillain-Barré (SGB), trouble neurologique invalidant, ainsi que l'arthrite réactive, ont également été associés à des infections récentes par certaines souches C. jejuni. C. lari et l'agent pathogène émergent C. upsaliensis ont également été signalés dans un petit pourcentage de cas d'infection humaine provoquée par Campylobacter. Les Campylobacter spp. sont hautement infectieuses : la présence de 500 bactéries seulement peut entraîner des maladies. Il y a une demande accrue pour les tests de Campylobacter dans les produits alimentaires afin d'être conforme aux nouvelles réglementations concernant les niveaux de Campylobacter dans les volailles. La majorité des Campylobacter spp. sont relativement inactives d'un point de vue métabolique, rendant l'identification basée sur les caractéristiques biochimiques difficile. Actuellement, les techniques les plus couramment utilisées pour tester les produits alimentaires afin de détecter les Campylobacter sont des méthodes traditionnelles basées sur des milieux de culture. Listeria monocytogenes est l'un des pathogènes contenus dans les aliments les plus répandus à travers le monde et qui est responsable d'infections graves chez les personnes immunodéficientes, les femmes enceintes et les nouveau-nés. Par conséquent, le taux de mortalité chez les personnes infectées est élevé malgré le nombre relativement faible de cas à travers le monde. Les infections à Listeria (listériose) peuvent se traduire par une gastroentérite légère ou des cas graves de sepsie, de méningite, d'encéphalite ou d'avortement. En raison de l'omniprésence de Listeria et de sa capacité à se développer à des températures de réfrigération comprises entre 2 et 8 °C, les produits alimentaires constituent l'une des principales sources d'infection. Listeria est un genre de bactéries à Gram positif, non sporulées et en forme de tige. Des six espèces connues de Listeria, Listeria monocytogenes mérite une attention toute particulière au titre de pathogène humain et animal ; L. ivanovii est pathogène uniquement chez les animaux, tandis que L. innocua, L. seeligeri, L. grayi et L. welshimeri sont considérés comme des bactéries inoffensives pour l'environnement. Par conséquent, dans de nombreux pays, la législation alimentaire établit des limites strictes pour Listeria spp. ou Listeria monocytogenes. Dans le cadre des contrôles qualité liés aux risques effectués sur les aliments, des tests doivent être menés pour L. monocytogenes ainsi que pour le genre Listeria en général. La présence de Listeria, en particulier de L. innocua, est un indicateur de mauvaises conditions d'hygiène dans le processus de production. Les principales sources d'infection sont les aliments d'origine animale crus ou insuffisamment cuits, tels que la viande et les produits laitiers. Les intestins des ruminants constituent le réservoir de l'EHEC. Les micro-organismes peuvent pénétrer dans les produits alimentaires au cours de la transformation de la viande et des produits laitiers si les conditions d'hygiène ne sont pas appropriées.
