Nitrogen Determination

The Kjeldahl method is used to determine the nitrogen content of a sample. In this analysis, the sample is digested with a strong acid and the free nitrogen reacts to form ammonium sulfate.

What can you determine with the Kjeldahl method?

The Kjeldahl method is used for the quantitative determination of nitrogen contained in organic substances plus the nitrogen contained in the inorganic compounds ammonia and ammonium (NH3/NH4+) in all kinds of food or environment samples such as:

  • Meat and related product such as sausages

  • Milk and related products (cheese and milk powder)
