Bij de procedure voor het bepalen van voedingsvezels wordt het monster blootgesteld aan een reeks enzymatische verteringsprocessen die het echte verteringsproces simuleren dat plaatsvindt in het menselijke of dierlijke spijsverteringskanaal, waarbij het niet-verteerde residu dat overblijft aan het einde van de analyse, wordt berekend. Analyse van voedingsvezels wordt doorgaans uitgevoerd op voedsel dat bedoeld is voor menselijke consumptie, analyse van ruwe vezels wordt uitgevoerd op diervoeder of grondstoffen van plantaardige oorsprong, bijvoorbeeld graanproducten. Met de GDE wordt enzymatische vertering uitgevoerd, een delicate fase waarin monsters worden ondergedompeld in een thermostatisch waterbad en worden geroerd. Een continue en constante menging van het monster is noodzakelijk om oververhitting van het monster te voorkomen. Het apparaat bestaat uit een dompelthermostaat, een reservoir van transparant polycarbonaat en een VELP magnetische roerder met 6 plaatsen, voor een uitstekende thermoregulatie en precisie. Het wordt aangeraden gedeïoniseerd water te gebruiken, omdat daarmee een mogelijke oorzaak voor kalkaanslag wordt weggenomen.
