EHEC kann lebensbedrohliche Krankheiten auslösen, insbesondere bei Menschen mit Immunschwäche, kleinen Kindern und älteren Menschen. Obwohl die häufigste Ursache von EHEC ist E. coli O157, andere Serotypen wie O26, O45, O103, O111, O121 und O145 sind ebenfalls relativ häufige Infektionsursachen. Typische Symptome sind starke Bauchschmerzen und Durchfall, der zunächst wässrig, aber oft blutig wird. E. coli sind gramnegative, nicht sporulierende, fakultativ anaerobe Bazillen. Unter den pathogenen E. coli haben in den letzten Jahren Verotoxin-bildende Stämme (STEC oder VTEC) an Bedeutung gewonnen. Die Gruppe der enterohämorrhagischen E. coli (EHEC) mit seinem hochpathogenen Serovar O157:H7-Stamm ist in dieser Hinsicht besonders interessant. Hauptansteckungsquellen sind kontaminierte, rohe oder unzureichend erhitzte Lebensmittel tierischen Ursprungs, wie Fleisch und Milchprodukte. Das Reservoir für EHEC ist der Darm von Wiederkäuern. Bei der Verarbeitung von Fleisch- und Milchprodukten können Mikroorganismen bei unzureichenden hygienischen Bedingungen in Lebensmittel gelangen. Der drastische Anstieg der Lebensmittelkontamination durch E. coli O157 erfordert zuverlässige und schnelle Nachweismethoden. Innovative Schnelltests erleichtern das Screening auf Krankheitserreger.
